Warm Up Your Winter with a Vivacious Vegetable Curry

Winter goes hand in hand with decadent comfort food – and there is nothing more comforting than a spicy vegetable curry! While all of you meat lovers out there might be wondering how a vegetarian curry could possibly fill the void in your stomach, don’t knock it until you try it! We are about to share one of the easiest and most nutritious curry recipes with you. It is a curry recipe that is sure to put a smile on your face and provide you with a warm, uplifting feeling in your tummy. So what are you waiting for? Ingredients:

  • 18 small potatoes, sliced into quarters
  • 6 carrots, peeled and thinly sliced
  • 240 g tins of haricot or cannellini beans, rinsed and drained
  • 1 bag of spinach, rinsed
  • 2 tins of coconut milk
  • 2 tins of chopped tomatoes
  • 1 Tbsp. (15 ml) of turmeric
  • 1 Tbsp. (15 ml) of ground cumin
  • 2 tsp. (10 ml) of chilli flakes or curry powder
  • Rice
  • Salt and pepper to taste

Method:

  • Start by placing a saucepan on a high heat. Place the potatoes in the saucepan and fill with water until they are covered. Bring to a boil before reducing the heat and allowing the potatoes to simmer gently for about 20 minutes. You will know that they are done when they are soft enough to pierce with a fork.
  • Once done, drain and place into a separate, large pot. Add the turmeric, cumin, chilli flakes/curry powder, tinned tomatoes, carrots, coconut, salt and pepper. Bring to a boil before turning down the heat and covering the pan with the lid. Let the mixture simmer for an hour.
  • Cook your rice at the same time as the vegetables.
  • Once your vegetable mix has been cooking for 45 minutes, stir in the beans and the spinach. Leave to cook for the remaining 15 minutes before removing from the stove and serving over the rice.

This is one of those easy vegetarian recipes that are sure to become a staple in your home throughout the colder months. Luckily, it does not require a lot of practice in order to get right. As long as you are using the recommended spices, this will be a curry dish that nobody will be quick to forget. The best part is that the recipe serves six, so if you only have a small family, you will have some to spare for tomorrow’s lunch, or to freeze for the next time someone gets a craving for a spicy meal.
