The Only Technique You Need to Know for Grilled Fish

We’re about to let you in on the secret to perfectly grilled fish that doesn’t fall apart: It’s called escabèche, and it’s pretty genius. Instead of marinating the fish before it goes on the grill, you’ll grill it first, then take it off the heat and give it a post-grill marinade bath to deliver flavor without compromising texture. Here’s how to do it:

Use the Best-Possible Fish
This recipe has so few ingredients that it’s critical to use the best-possible fish you can find. We used red snapper fillets, but if the black bass or porgy at your fishmonger look even better, go for it. Any skin-on white fish will work beautifully here as long as it’s super fresh.

Don’t Rush It
After you rub the fillets with olive oil, salt, and pepper, place them skin-side down over a medium-hot (and clean!) grill. After about five minutes, the fillets should be opaque around the edges with crispy skin that should slide right off the grates. If they don’t come off easily, leave them skin-side down for another minute or two.

Mix Up Your Marinade
The basic formula for any escabèche marinade is oil + acid + aromatics. It’s so simple and lends itself to countless variations. Experiment with different vinegars and citrus juices and aromatics like garlic, fennel, chiles, and capers

Get your curry powder ready and let’s get cooking!

  • 18 small potatoes, sliced into quarters
  • 6 carrots, peeled and thinly sliced
  • 240 g tins of haricot or cannellini beans, rinsed and drained
  • 1 bag of spinach, rinsed
  • 2 tins of coconut milk
  • 2 tins of chopped tomatoes
  • 1 Tbsp. (15 ml) of turmeric
  • 1 Tbsp. (15 ml) of ground cumin
  • 2 tsp. (10 ml) of chilli flakes or curry powder
  • Rice
  • Salt and pepper to taste

  • Start by placing a saucepan on a high heat. Place the potatoes in the saucepan and fill with water until they are covered. Bring to a boil before reducing the heat and allowing the potatoes to simmer gently for about 20 minutes. You will know that they are done when they are soft enough to pierce with a fork.
  • Once done, drain and place into a separate, large pot. Add the turmeric, cumin, chilli flakes/curry powder, tinned tomatoes, carrots, coconut, salt and pepper. Bring to a boil before turning down the heat and covering the pan with the lid. Let the mixture simmer for an hour.
  • Cook your rice at the same time as the vegetables.
  • Once your vegetable mix has been cooking for 45 minutes, stir in the beans and the spinach. Leave to cook for the remaining 15 minutes before removing from the stove and serving over the rice.

This is one of those easy vegetarian recipes that are sure to become a staple in your home throughout the colder months. Luckily, it does not require a lot of practice in order to get right.
